A Halloween Treat: Beetroot and Chocolate Cake

Some of you may know that it is in fact National Baking Week and people up and down the country are creating delicious treats all in aid of Great Ormond Street Hospital. I decided to get involved by cooking up this naughty treat to share with you lovely lot. I'd never thought of combining chocolate and beetroot in a cake before, but since coming across this fantastic recipe on Pintrest, I have been so intrigued to how it would taste! I can tell you first had that they are a match made in heaven! Some of you may be put off by the thought of adding beetroot (a trick rather than a treat!) but it makes your chocolate cake extra indulgent as it holds lots of moisture. You really wouldn't know beetroot was even in it!

I found this wonderful recipe on the lovely blog Wholesome via Pintrest. You can follow Caítríona's recipe HERE.   
You will need: 150g caster sugar, 100g butter, 60g plain flour, 65g grated beetroot, 2 eggs, 3 heaped tablespoons of cocoa powder,  1/2 teaspoon of vanilla, 1/2 baking powder.

First of all, pre-heat your oven to 200C (fan oven) and line a cake tin with greaseproof paper.

Step 1: Add the butter and sugar in a saucepan and leave on a low heat. Stir every now and until they melt and turns syrupy.
Step 2: Combine the rest of the dry ingredients (flour, cocoa powder, baking powder) in a mixing bowl. 
Step 3: Create a well in the dry mixture and pour in the melted butter and sugar. Mix together well.
Step 4: Beat the eggs separately then add to your mixture. 
Step 5: Don't forget to add your secret ingredient; beetroot! 

You should have a lovely rich chocolately mixture....

Step 6: Finally, pour the cake mixture into the lined cake tin and leave to bake in the oven for 40 mins.
And thats it! I decided to give my cake a Halloweeny make-over by sprinkling with icing sugar and creating this spiders web by dribbling icing (with a little beetroot juice) over the top.
You must give this one a go! Mary Berry would definitely approve of this wonderfully moist cake! Have you made anything for National Baking Week?
