Monday's can always be a little bit of a struggle, so why not treat yourself to some tasty (and healthy) breakfast treats to start the week off in style. Try these ever so scrummy blueberry and raspberry pancakes made with alpro soya milk.
To make this delicious breakfast, simply mix 2 cups of plain flour, a tablespoon of baking powder, 6 tablespoons of sugar and 2 cups of alpro soya milk (add this slowly to the mixture). Whisk until smooth and then add a cup each of raspberries and blueberries. Heat a small amount of butter in a pan and pour in a small amount of batter. After a minute of 2, when you can see that the bottom and sides of the pancake are brown, flip using a palette knife and cook the other side. I then finished of my pancakes with some more fresh berries and a drizzle of honey. Experiment with other flavours too, i'm sure mixing banana or strawberries into the recipe would be pretty yummy as well.
