Today I decided to take a little break from the dreaded dissertation and relieve some of the stress with a spot of baking! (cake is the answer to everything, right?) And because its Easter weekend, I figured Creme Egg cupcakes would be the perfect little treat!
I simply followed my normal chocolate cupcake recipe (BBC Good Food is always a winner) and then before baking, pushed a miniature creme egg into the centre of each cake. The top tip here is to pop the eggs into the freezer for about 10 minutes before baking, this way they manage to retain their shape and you get left with a lovely creme egg treat in the middle of each cupcake! I used a dash of yellow food colouring in the butter icing for that extra sunny, spring-time feel and popped a second creme egg on the top for decoration...and because you can never really have too much chocolate!!
